The Recipe: Moist Mocha Chocolate Cake

Ingredients (Serves 8)

For the cake:

  • 100 g softened butter (plus a little extra for greasing)
  • 200 g flour (plus more for dusting)
  • 3 cups of strong mocha or coffee
  • 100 g bitter couverture (60% cocoa, finely chopped)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tbsp cocoa powder
  • 225 g sugar
  • 2 packs vanilla sugar
  • 3 organic eggs (medium)
  • 2-3 tbsp coffee eau de vie (or alternative brandy/coffee liqueur)

For the filling:

  • 1 leaf of white gelatine
  • 50 ml strong mocha or coffee
  • 1 portion of soluble coffee powder (2 g)
  • 200 g whipping cream (35% fat)
  • 50 g sugar
  • 100 g fresh redcurrants (plus sprigs for garnish)

For the chocolate glaze:

  • 2 tbsp whipping cream (30–35 g)
  • 50 g couverture (60% cocoa, very finely chopped)

Kitchen tools:

  • 1 springform tin (18 cm diameter)
  • Palette knife or offset spatula

Preparation Steps

1. Prepare Your Cake Base

  • Preheat your oven to 160°C (Top/Bottom Heat).
  • Grease your springform tin and dust with flour. Brew the coffee, and while it’s still hot, mix 135 ml with the couverture and 100 g sugar until dissolved.
  • Cream the butter, 125 g sugar, and 1 pack of vanilla sugar, then add the eggs one at a time. Combine the flour, baking powder, baking soda, and cocoa powder, then stir into the mixture. Finally, incorporate the coffee and chocolate mixture.
  • Pour into the tin and bake for 55 minutes. Test with a toothpick—if necessary, leave in the switched-off oven for another 5 minutes. Cool for 5 minutes before removing the tin and placing the cake upside down on a cooling rack. Once fully cooled, slice off the domed top to level the cake, then slice horizontally into three layers.

2. Make the Filling

  • Dissolve one pack of vanilla sugar into ½ cup of coffee and stir in the coffee eau de vie. Moisten the three cake layers with this mixture using a pastry brush.
  • For the filling, soak the leaf gelatine in cold water for 5 minutes. Heat 50 ml coffee over a water bath and stir in the gelatine and coffee powder until dissolved. Allow it to cool until it begins setting.
  • Whisk 200 g whipping cream with the sugar until stiff. Fold half into the coffee jelly and spread thickly over the bottom cake layer. Add the second cake layer, top with fresh redcurrants, and spread the remaining cream evenly. Place the final cake layer on top.

3. Create the Glaze

  • Heat 2 tbsp cream, stir in the couverture, and melt until smooth. Pour over the top layer of the cake, spreading gently with a palette knife. Allow it to set.

4. Decorate and Serve

  • Garnish with redcurrant sprigs for a festive touch. For best results, consider slicing the cake a day after assembling to ensure clean, even layers.
